Piedmont on Piedmont is more than just a wine bar—it’s a love letter to connection, culture, and culinary exploration. Inspired by the rolling hills of Italy’s Piemonte region, this thoughtfully curated space pairs world-class wines with Piemontese flavors and a signature touch of Southern hospitality.
For Ash Marsh, the visionary CEO of Marsh Collective, and her son Nelson, the personality behind Piedmont on Piedmont, this venture is the culmination of years of passion and expertise. Drawing from Ash’s leadership in hospitality design and Nelson’s deep roots in the wine world, the concept bridges two traditions that, while geographically distant, share a mutual respect for slowing down, savoring the moment, and celebrating life.
A Culinary Journey
Every visit to Piedmont on Piedmont is an invitation to explore. The wine list is a testament to Nelson’s expertise, boasting selections from Italy’s famed Piemonte region alongside other global classics. Known for his innovative approach, Nelson’s meticulous curation ensures there’s a glass for everyone—from bold Barolos to crisp Arneis, each offering tells a story of its own.
To complement the wines, the culinary team crafts a menu inspired by both Italian traditions and Southern ingredients. From light lunches designed for a quick escape to shareable family-style dinners, every dish is meant to enhance the experience. Sante on 9th Street is the combined inspirations of Buddy Ingram, Chris Thomlinson and Matt Poirier, all international travelers, but with unique backgrounds to unify the Sante concept. The space offers both a wine bar and retail shop with selections personally tasted and selected by Ingram, a Level 1 Sommelier, and staff.
“Our wine selections are meant to be approachable and a good value, filled with offerings you will not find at grocery stores, only at the finest restaurants,” says Poirier, who also owns The Hound and The Depot in Auburn as well as other ventures.
The partners decided on the French name Sante, pronounced “Son Tey,” for its English translation of “To your health.” Poirier had purchased the 100-year-old plus building in 2023. When renovations proved extensive, the partners pushed through to ensure the quality and ambience of the space. With exposed brick walls, velvet plush lounge chairs and vintage lighting, the restaurant provides a relaxed atmosphere with a European flair.
Ingram retired after an extensive career in orthopedic implant sales to begin a study of wine. He worked at VinoTeca, an Atlanta wine shop, as well as pursuing his sommelier certification. The dedicated studies provided a foundation for Ingram’s learning, tasting and researching wines for Sante.
Local attorney Thomlinson, a co-owner, has a passion for travel, great food and good wine. He, along with Buddy and Matt, share a great passion for hospitality which transfers into the Sante space.
California native Poirier came to Auburn after marrying Jana, a Southern girl, in July 2011 with the dream of opening a restaurant. The couple realized the goal by opening The Hound and The Depot in 2012 and 2015 respectively.
“We have since opened Sneak and Dawdle in Opelika and the Corner Office in Auburn. Sante is our fifth concept in the area. Jana and I have been dear friends with Chris and Buddy since opening The Hound,” says Poirier.
Sante offers high quality charcuterie and cheese boards sourced from around the region. Patrons can find curated beer selections, both domestic and craft, by the can or bottle. In addition to wine and beer, the retail space includes Capella Cheese, The Spotted Trotter, Southern Straws, Wine Chips, Fishwife Tinned Fish, Kingfisher Leatherworks, Stinson Breads, Pure Southern Honey and Cakeitecture. The staff loves to work with customers on wine pairings from around the world to complement at-home dinners. Selections include offerings from South Africa, Greece, Portugal and South America. The wine bar and retail store include a selection of sweet wines including madeira, port and late-harvest wines.
